Oregano bevat de twee bijzondere stoffen carvacrol en tymol. Deze chemische verbindingen zijn tevens in grote hoeveelheden in de olie te vinden. Carvacrol is de meest onderzochte inhoudsstof. Het is een fenol en kenmerkt zich door de pittige, bittere smaak met een hint van een warmtesensatie. Carvacrol krijgt vele mogelijke eigenschappen toegeschreven waaronder antibacteriëel, antischimmel, antiparasitair, antimicrobiëel en antioxidant. Tevens mogelijk antitumor, antimutageen, antigenotoxisch, pijnstillend, krampstillend, anti-inflammatoir, angiogeen, antiparasitair, anti-bloedplaatjesklontering, pijnremmend, antielastase, insecticide, antihepatotoxisch en hepatoprotectieve activiteiten. Vanwege de sterk antibacteriële werking van oregano-olie zou deze effectief kunnen zijn in het bestrijden van akelige bacteriën in de darmen zoals E-coli, evenals het norovirus.
